The doctor I work for came home from the hospital today furious because a patient called him a “health care provider.” “I went to medical school,” he yelled. “I’m a goddamned physician!” He likes me to address him as Dr. Clark, so I do. He is nice enough, a good father, and crazy about my cooking. His wife can hardly boil noodles. She seems afraid of the stove. But Dr. Clark thinks he knows everything. And know-it-alls do not make breakthroughs. They do not surprise themselves and the world. They are not top doctors. The best show deference to what they are dealing with. They must be in awe of disease and mortality. They must respect these forces. In Sherlock Holmes stories, which helped me learn English, Holmes has incredible respect for his enemy, Professor Moriarty. He’s almost in love with him. Holmes’s saddest hour is when Moriarty is killed, because then he is truly alone in the world. There are no more equal opponents for him. Oh, how he mourns. Doctors cannot be macho and think they will arm wrestle people’s illnesses and win. Even in the kitchen you give your ingredients their due. You have to respect their powers, their indelible natures, their ingenuity, their insistence on being what they are. You cannot think you will dominate them, turn them entirely to your will, break them, or conquer them. This is imperialism, not the spirit of science, or of cooking for that matter. Semmelweis did not have that kind of arrogance. He had the spirit of humility, of questing, of curiosity, of inquiry. This is what makes brilliant scientific minds. This is a key ingredient of genius.
